TraVek's Turkey-Stuffed Acorn Squash with Sage and Cranberry Glaze

Ingredients
- 2 acorn squashes, halved and seeds removed
- 1 lb ground turkey
- 1 tbsp olive oil
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 celery stalk, finely chopped
- 1/2 cup diced carrots
- 1/2 cup dried cranberries
- 1/2 cup cooked wild rice
- 1 tsp fresh sage, chopped (or 1/2 tsp dried)
- 1/2 tsp thyme
- Salt and pepper to taste
- 1/4 cup chicken broth
- 2 tbsp pure maple syrup (for glaze)
- 1 tbsp balsamic vinegar (for glaze)

Prep the Squash: Preheat oven to 400°F (200°C). Place squash halves on a baking sheet, cut side up. Drizzle with olive oil, season with salt and pepper, and roast for 25-30 minutes, until soft and slightly caramelized.

Cook the Filling: While squash is roasting, heat a skillet over medium heat and add olive oil. Sauté the onions, garlic, celery, and carrots until softened, about 5 minutes. Add the ground turkey, breaking it up as it cooks until browned.

Add Seasonings & Mix-ins: Stir in cranberries, wild rice, sage, thyme, salt, and pepper. Pour in the chicken broth, cooking until liquid reduces slightly, and all flavors meld together, around 5 minutes.

Stuff & Glaze: Remove squash from the oven and stuff each half with the turkey mixture. In a small bowl, mix maple syrup and balsamic vinegar to create a glaze. Drizzle over the stuffed squash.

Bake Again: Return the stuffed squash to the oven and bake for an additional 10 minutes, until everything is warm and the glaze has set.
